Superfood Salad

The Original Superfood Salad – according to Leon restaurants (and credit to them for the recipe). To make it vegan, leave out or substitute the feta cheese.

Ingredients:
Small head broccoli, cut into bite size florets, stalks peeled and sliced
120g frozen peas (defrosted)
¼ cucumber cut into slim batons
100g feta cheese, crumbled
2 tbsp mixed toasted seeds
½ an avocado, cut into pieces
100g cooked quinoa
Fresh chopped parsley and mint if available
French dressing – 2 tbsp olive oil, ½ tbsp white wine vinegar, 1 tsp water, ½ clove garlic crushed – shake all together thoroughly. Optional extras – 1 small shallot finely diced, ½ tsp sugar
Method:
Put 2cm water in a pan with lid on, bring to boil, drop in broccoli, re-cover pan
Drain broccoli after 3 mins and run it under cold water
Build your salad in layers of broccoli, peas, cucumber, feta, avocado, quinoa and finally the herbs and seeds
Dress your salad just before you eat it
